Shrimp and Cilantro Toasts
Ingredients
1 lb large shrimp, peeled and deveined | ||
8 scallions, chopped | ||
1 stem lemon grass, chopped, white part only | ||
1 clove garlic, crushed | ||
1 egg white | ||
1 tbs oil | ||
1 tbs fresh cilantro, chopped | ||
1 tbs fish sauce | ||
2 tsp chili sauce | ||
1 tsp lemon juice | ||
8 slices stale white bread, crusts removed | ||
oil for shallow frying |
- Add the shrimp, scallions, lemon grass, garlic, egg white, oil, cilantro, fish sauce, chili sauce and lemon juice to a food processor and process until smooth.
- Spread the mixture over the bread, right to the edge, then cut each slice into 4 triangles.
- Heat 3/4 inch of oil in a large saute pan, then add the bread and cook, shrimp side down, for 2-3 minutes.
- Turn over and cook the other side for 1 minute, or until crisp.
- Drain on paper towels.
