Slow Cooker White Beans with Tasso
Ingredients
3 1/2 cups chicken stock | ||
2 cups Great Northern beans, sorted and rinsed | ||
1 smoked ham hock | ||
1/2 cup andouille sausage, diced | ||
1 yellow onion, chopped | ||
2 celery stalks, chopped | ||
1 red bell pepper, diced | ||
4 garlic cloves, diced or pressed | ||
2 bay leaves | ||
1/2 habanero pepper, seeded and finely minced | ||
1 tbs fresh parsley, chopped |
- Stir 3 1/4 cup of chicken stock and all remaining ingredients in a slow cooker.
- Cover and cook on high until beans are tender, stirring occasionally and adding more stock if dry, about 4 1/2 hours.
- Remove ham hock and cut off all the meat, shred and return to beans.
- Season with salt and pepper.
