Creole Marinated Tomatoes
|3 lbs large ripe tomatoes, cored and cut into 6 wedges|
|4 large scallions, thinly sliced, white and green parts|
|2 tbs fresh parsley, chopped|
|1 cup extra virgin olive oil|
|3/4 cup plain rice vinegar|
|2 tbs dark brown sugar, packed|
|1 celery stalk, thinly sliced|
|1 tbs fresh oregano, chopped|
|2 tsp fresh thyme, chopped|
|1 tsp hot pepper sauce|
|1 tsp lemon peel, grated|
|kosher salt and black pepper to taste|
- Combine tomatoes, green onions, and parsley in a large bowl.
- Combine oil and all remaining ingredients in a heavy sauce pan.
- Stir over medium-low heat until sugar and salt dissolve,about 1 minute.
- Stir warm marmalade into tomato mixture, then chill for at least 4 hours.
