Creole Marinated Tomatoes
Ingredients
3 lbs large ripe tomatoes, cored and cut into 6 wedges | ||
4 large scallions, thinly sliced, white and green parts | ||
2 tbs fresh parsley, chopped | ||
1 cup extra virgin olive oil | ||
3/4 cup plain rice vinegar | ||
2 tbs dark brown sugar, packed | ||
1 celery stalk, thinly sliced | ||
1 tbs fresh oregano, chopped | ||
2 tsp fresh thyme, chopped | ||
1 tsp hot pepper sauce | ||
1 tsp lemon peel, grated | ||
kosher salt and black pepper to taste |
- Combine tomatoes, green onions, and parsley in a large bowl.
- Combine oil and all remaining ingredients in a heavy sauce pan.
- Stir over medium-low heat until sugar and salt dissolve,about 1 minute.
- Stir warm marmalade into tomato mixture, then chill for at least 4 hours.
