Slow Cooker White Beans with Tasso
|3 1/2 cups chicken stock|
|2 cups Great Northern beans, sorted and rinsed|
|1 smoked ham hock|
|1/2 cup andouille sausage, diced|
|1 yellow onion, chopped|
|2 celery stalks, chopped|
|1 red bell pepper, diced|
|4 garlic cloves, diced or pressed|
|2 bay leaves|
|1/2 habanero pepper, seeded and finely minced|
|1 tbs fresh parsley, chopped|
- Stir 3 1/4 cup of chicken stock and all remaining ingredients in a slow cooker.
- Cover and cook on high until beans are tender, stirring occasionally and adding more stock if dry, about 4 1/2 hours.
- Remove ham hock and cut off all the meat, shred and return to beans.
- Season with salt and pepper.
