Shrimp and Melon Salad
Ingredients
6 cups torn romaine lettuce | ||
2 cups cantaloupe balls | ||
3 cups honey dew melon balls | ||
1 lb medium shrimp, peeled and deveined | ||
1 cup honey Dijon dressing or dressing or your choice | ||
kosher salt and black pepper to taste | ||
1 cup watermelon balls |
- Add shrimp to boiling water and cook for about 3 minutes until cooked through. Drain and cool.
- Arrange lettuce leaves on a large serving platter and arrange honey dew and cantaloupe over.
- Top with shrimp, season with salt and pepper, then drizzle dressing over.
