Shrimp and Melon Salad

  • 6 cups torn romaine lettuce
  • 2 cups cantaloupe balls
  • 3 cups honey dew melon balls
  • 1 lb medium shrimp, peeled and deveined
  • 1 cup honey Dijon dressing or dressing or your choice
  • kosher salt and black pepper to taste
  • 1 cup watermelon balls
  • Add shrimp to boiling water and cook for about 3 minutes until cooked through. Drain and cool.
  • Arrange lettuce leaves on a large serving platter and arrange honey dew and cantaloupe over.
  • Top with shrimp, season with salt and pepper, then drizzle dressing over.
