Shrimp and Melon Salad
|6 cups torn romaine lettuce|
|2 cups cantaloupe balls|
|3 cups honey dew melon balls|
|1 lb medium shrimp, peeled and deveined|
|1 cup honey Dijon dressing or dressing or your choice|
|kosher salt and black pepper to taste|
|1 cup watermelon balls|
- Add shrimp to boiling water and cook for about 3 minutes until cooked through. Drain and cool.
- Arrange lettuce leaves on a large serving platter and arrange honey dew and cantaloupe over.
- Top with shrimp, season with salt and pepper, then drizzle dressing over.
