Thai Rice Noodle Salad
Ingredients
6 tbs rice vinegar | ||
1 tbs peanut butter | ||
4 tbs Dijon mustard | ||
4 tbs honey | ||
4 tbs soy sauce | ||
1/4 cup canola oil | ||
1/4 cup orange juice | ||
3 Thai chilies chopped | ||
6 scallions, sliced on the bias | ||
3 tbs of sesame seeds | ||
1 lb rice noodles. |
- Cook noodles according to package directions.
- Add all other ingredients to a non metal bowl and mix well.
- Toss noodles with dressing.
- Recipe may be doubled.
