Cold Asian Noodles with Peanut Sauce
Ingredients
1 lb pound Asian wheat or rice noodles | ||
3 garlic cloves, minced | ||
1/2 cup cilantro, chopped | ||
1 tbs fresh ginger, minced | ||
1/2 cup smooth peanut butter | ||
2 tbs soy sauce | ||
2 tbs soy sauce | ||
2 tsp siracha chili sauce | ||
1 Serrano pepper chopped seeds and all (optional for spicy) |
Asian in origin this dish is spicy and savory.
- Cook noodles following package instructions. Cool
- In a large sauce pan add all other ingredients and simmer over low heat for 20 minutes, stirring frequently.
- Let cool slightly.
- Serve over cold noodles
*Note: you may also use this sauce to pour over poached shredded chicken or shrimp.
