Spiced Sweet Potatoes with Peaches and Cashews
|1 1/2 cups sweet potatoes, cubed and cooked|
|2 tsp lemon juice|
|2 tbs light brown sugar|
|1/2 tsp ground cloves|
|1 (13 oz) can peach halves|
|1/2 cup cashews|
|1 tbs butter|
- Combine sweet potatoes, lemon juice, brown sugar, cloves and cashews.
- Drain peach halves and arrange in a buttered baking dish.
- Fill the centers with sweet potatoes, and dot with butter.
- Bake in a preheated 400 degree oven for 20 minutes.
