|2 lbs of chicken, cut up|
|2 tbs canola oil|
|1 can chicken broth|
|1 (14oz) can of diced tomatoes|
|1/3 cup water|
|1 small onion, chopped|
|4 cloves garlic, minced|
|1 tsp tumeric|
|2 tsp ground cumin|
|kosher salt and fresh cracked black pepper to taste|
|1 bay leaf|
|8 oz bag of frozen peas|
|1 cup rice|
|1/2 cup whole green pimento stuffed olives|
|2 tbs cilantro|
|1 Serrano pepper, seeded and chopped|
- In a large saute pan or iron skillet, brown the chicken in oil. Season with salt and pepper.
- Add all other ingredients, except for the rice and simmer partially covered.
- Cook rice according to package directions.
