Hawaiian Salmon Poke


  • 1 lb of wild salmon, cubed
  • 4 scallions, chopped, white and green parts
  • 2 tsp of chili flakes
  • 1 tbs bonito flakes
  • 1 tbs sweet soy sauce
  • kosher salt and fresh crack black pepper to taste
  • 1 sheet of kombu (seaweed), shredded
  • Add all ingredients to a glass bowl and gently mix well.
  • Cover and refrigerate for several hours,
  • Serve in small bowls.
