Butter Poached Lobster Tails


  • 4 lobster tails
  • 2 cups of chicken stock
  • 2 sticks unsalted butter
  • Kosher salt and black pepper to taste
  • Add the chicken stock and butter to a sauce pan using medium heat.
  • Once the butter has melted, add the lobster tails.
  • Reduce the heat to medium low and poach the lobster tails for about 30 minutes.
  • Remove lobsters from stock, remove the shells, season with salt and pepper.
