Sweet Potato Casserole
Ingredients
3 cups cooked sweet potatoes | ||
3/4 cup sugar | ||
1/2 cup butter | ||
2 eggs | ||
1 tsp vanilla extract | ||
1/3 cup evaporated milk | ||
1 lb of light brown sugar | ||
1/2 cup self rising flour | ||
1 cup chopped pecans | ||
1/2 cup melted butter |
- Mix the sweet potatoes, sugar, 1/2 cup butter, eggs, vanilla and evaporated milk in a bowl.
- Pour into a 9×13 casserole.
- Mix the brown sugar, flour, pecans and 1/2 cup of melted butter in a bowl until crumbly.
- Sprinkle over the sweet potato mixture.
- Bake at 325 degrees for 25-30 minutes or until heated through.
