Black Eyed Pea and Corn Salsa
Ingredients
1 small can of sweet corn | ||
2 cans of black eyed peas, rinsed and drained | ||
6 roma tomatoes, chopped | ||
1 green pepper, chopped | ||
6 scallions, chopped | ||
2 tbs cilantro, chopped | ||
juice from 1 lime | ||
2 tbs fresh parsley, chopped | ||
1 jalapeno pepper, diced with seeds | ||
1 tsp kosher salt | ||
1 tsp black pepper | ||
1/2 cup Italian dressing | ||
tortilla chips for dipping |
- Drain the corn and peas and place in a mixing bowl.
- Add the chopped vegetables, spices Italian dressing and lime juice.
- Cover and refrigerate for 1 hour before serving.
