Spaghetti Sauce with Italian Sausage
Ingredients
1 and 1/2 lbs of Italian sausage, hot or sweet | ||
1/2 cup hot water | ||
10 fresh mushrooms, sliced | ||
1 carrot, cut in half | ||
1 onion, minced | ||

2 (28oz) cans of Italian plum tomatoes | ||
1 (6oz) can tomato paste | ||
1 cup dry red wine | ||
3 tbs fresh parsley, chopped | ||
1 tbs fresh basil, chopped | ||
1 tbs oregano | ||
kosher salt and fresh cracked black pepper to taste |
- Place the sausages in a saute pan along with the hot water, cover and cook for 10 minutes or until cooked through.
- Discard the sausage drippings.
- In stock pot or dutch oven add the olive oil and saute the mushrooms, carrot and onion for about 3-4 minutes.
- Add the sausages, tomatoes, tomato paste, wine, parsley, oregano, salt and pepper.
- Cover and simmer for 1 hour, stirring ocassionally.
