Spaghetti Sauce with Italian Sausage

Ingredients

  • 1 and 1/2 lbs of Italian sausage, hot or sweet
  • 1/2 cup hot water
  • 10 fresh mushrooms, sliced
  • 1 carrot, cut in half
  • 1 onion, minced
  • 1 onion, minced
  • 2 (28oz) cans of Italian plum tomatoes
  • 1 (6oz) can tomato paste
  • 1 cup dry red wine
  • 3 tbs fresh parsley, chopped
  • 1 tbs fresh basil, chopped
  • 1 tbs oregano
  • kosher salt and fresh cracked black pepper to taste
  • Place the sausages in a saute pan along with the hot water, cover and cook for 10 minutes or until cooked through.
  • Discard the sausage drippings.
  • In stock pot or dutch oven add the olive oil and saute the mushrooms, carrot and onion for about 3-4 minutes.
  • Add the sausages, tomatoes, tomato paste, wine, parsley, oregano, salt and pepper.
  • Cover and simmer for 1 hour, stirring ocassionally.
