How to Make a Brine


  • 2 cups superfine sugar
  • 2 and 1/4 cups kosher salt
  • 12 cloves
  • 12 black pepper corns
  • 3 bay leaves
  • 4 quarts water

This brine works well when Brining most meats and poultry. The great thing about this brine is that you may substitute and spices except for the salt and sugar to achieve desired flavor.


  • Add all ingredients to a large sauce pan or stock pot and bring to a boil and allow the sugar and salt to dissolve.
  • Allow the brine to cool, then add the desired meat, cover and let soak for 24 hours and up to 2 days.
