Turkey Teriyaki Meatloaf with Pineapple Sauce
Ingredients
1 and 1/4 lbs ground turkey | ||
1 and 1/4 lbs ground turkey | ||
1 large egg | ||
1 (20 oz) can crushed pineapple in juice, divided | ||
3/4 cup onion, chopped, divided | ||
2/3 cup chopped green pepper, divided | ||
2 tsp fresh ginger, chopped | ||
3 cloves chopped garlic | ||
1 tbs soy sauce | ||
kosher salt and black pepper to taste | ||
tsp canola oil | ||
1 tbs corn starch |
- Preheat oven to 350 degrees.
- Lightly coat a loaf pan or casserole dish with oi or cooking spray.
- In a large bowl, combine turkey, bread crumbs, egg, 1/2 cup pineapple with juice, 1/2 cup onion, 1/3 cup green pepper, ginger, garlic, salt and pepper to taste.
- knead until well mixed.
- Form into a loaf and place in the pan.
- Bake for 1 hour or until the internal temperature reaches 165 degrees.
- Remove from the oven and allow the meatloaf to rest for about 15 minutes before slicing.
- Meanwhile to prepare the sauce, in a medium sauce pan or skillet, heat over medium heat and saute remaining 1/4 cup onion and 1/3 cup green pepper.
- Stir in cornstarch into remaining pineapple with juice and add to the pan.
- Cook and stir until thickened and bubbly.
- Slice meatloaf and serve with the sauce.
