Turkey Teriyaki Meatloaf with Pineapple Sauce


  • 1 and 1/4 lbs ground turkey
  • 1 and 1/4 lbs ground turkey
  • 1 large egg
  • 1 (20 oz) can crushed pineapple in juice, divided
  • 3/4 cup onion, chopped, divided
  • 2/3 cup chopped green pepper, divided
  • 2 tsp fresh ginger, chopped
  • 3 cloves chopped garlic
  • 1 tbs soy sauce
  • kosher salt and black pepper to taste
  • tsp canola oil
  • 1 tbs corn starch


  • Preheat oven to 350 degrees.
  • Lightly coat a loaf pan or casserole dish with oi or cooking spray.
  • In a large bowl, combine turkey, bread crumbs, egg, 1/2 cup pineapple with juice, 1/2 cup onion, 1/3 cup green pepper, ginger, garlic, salt and pepper to taste.
  • knead until well mixed.
  • Form into a loaf and place in the pan.
  • Bake for 1 hour or until the internal temperature reaches 165 degrees.
  • Remove from the oven and allow the meatloaf to rest for about 15 minutes before slicing.
  • Meanwhile to prepare the sauce, in a medium sauce pan or skillet, heat over medium heat and saute remaining 1/4 cup onion and 1/3 cup green pepper.
  • Stir in cornstarch into remaining pineapple with juice and add to the pan.
  • Cook and stir until thickened and bubbly.
  • Slice meatloaf and serve with the sauce.
