Classic Rice Salad
Ingredients
3 cups cooked rice, cooled | ||
1/4 cup diced roasted red peppers, drained | ||
kosher salt and fresh cracked black pepper to taste | ||
1 cup mayonnaise | ||
1 tsp prepared mustard | ||
1 cup finely chopped onion | ||
1/2 cup sweet pickles, chopped | ||
4 hard boiled eggs chopped |
This is super simple rice salad that you can prepare in a snap.
- In a bowl mix together the mayonnaise and mustard. Mix well.
- Add all other ingredients and gently mix with dressing.
- Chill and serve.
