Avocado Anchovie Salad Dressing
Ingredients
2 ripe avocados, peeled and seeded | ||
1 small can of Anchovie fillets with oil | ||
3 tbs red wine vinegar | ||
juice from 1/2 lemon | ||
kosher salt and fresh cracked black pepper to taste |
This is a wonderful dressing served over crisp greens or a vegetable platter.
- Add all ingredients to a food processor and blend until smooth.
- Taste for seasoning.
