Baby Potatoes with Sour Cream and Caviar

Ingredients

  • 30 baby new potatoes
  • 1 cup sour cream
  • Kosher salt and black pepper to taste
  • 2-3 tbs caviar
  • Preheat the oven to 400 degrees.
  • Prick the potatoes all over with a fork and place on a baking tray.
  • Bake for 40 minutes or until fork tender.
  • Cool at room temperature.
  • Season with salt and pepper.
  • Cut a large cross in the top of each potato, squeeze open, and top with a small dollop of sour cream and a little caviar.
