Caribbean Lime Steak

Ingredients

  • 1/3 cup lime juice
  • 1/4 cup canola oil
  • 1/4 cup canola oil
  • 2 tbs prepared mustard
  • 1 tsp lime peel, grated
  • 1 tsp garlic powder
  • 1 tsp pepper
  • 1 tsp kosher salt
  • 1 tsp kosher salt
  • lime wedges for serving
  • 2 lbs flank steak, trimmed
  • In a non metal bowl, whisk the lime juice, oil, molasses, lime peel, garlic powder, pepper and salt.
  • Score the flank steak across the top against the grain.
  • Pour the lime juice mixture over steak, turning to coal on all sides.
  • Cover and marinate steak for at least 8 hours or overnight.
  • Cook steak over hot  coals or broil for 5 minutes on each side for medium rare.
  • Slice steak thinly on the diagonal and serve.
