Thai Rice Noodle Salad

Ingredients

  • 6 tbs rice vinegar
  • 1 tbs peanut butter
  • 4 tbs Dijon mustard
  • 4 tbs honey
  • 4 tbs soy sauce
  • 1/4 cup canola oil
  • 1/4 cup orange juice
  • 3 Thai chilies chopped
  • 6 scallions, sliced on the bias
  • 3 tbs of sesame seeds
  • 1 lb rice noodles.
  • Cook noodles according to package directions.
  • Add all other ingredients to a non metal bowl and mix well.
  • Toss noodles with dressing.
  • Recipe may be doubled.
