Vietnamese Fried Rice

Ingredients

  • 3 tbs cooking oil
  • 1 large onion, coarsely chopped
  • 3 cloves garlic, sliced
  • kosher salt and fresh cracked black pepper to taste
  • 2-4 Thai chilies, seeded and chopped
  • 1 tsp sugar
  • 1 tbs soy sauce
  • 1 tbs fish sauce
  • 3 cups cooked rice
  • 1/4 cup peas
  • 1/4 cup green beans, cut into 1 inch pieces
  • 1/4 cup carrots, sliced into thin strips
  • 1/4 cup carrots, sliced into thin strips
  • Cook rice according to package directions, then place in the refrigerator to chill for several hours or overnight
  • Heat oil in a large saute pan or wok.
  • Add the meat, onions, chilies and seasonings.
  • Stir fry until meat is browned. About 3 minutes.
  • Add the rice and stir -fry for another 5 minutes.
  • Add vegetables and stir into rice and meat mixture.
  • Just before serving, add eggs.
  • Over medium heat, stir eggs carefully through rice until they are cooked.
  • Serve hot with a salad of leaf lettuce, cucumbers, fresh mint and parsley.
