Lemon Curd

Ingredients

  • 1/3 cup sugar
  • 2 tsp cornstarch
  • 2 tsp grated lemon rind
  • 1/4 cup lemon juice
  • 1/4 cup butter
  • 2 beaten eggs
  • In a sauce pan combine the sugar and cornstarch.
  • Stir in the lemon peel and lemon juice, then add the butter
  • Cook and stir until thickened and bubbly.
  • Stir half of the lemon mixture into the eggs.
  • Pour the egg mixture into the pan.
  • Cook and stir for 2 minutes.
  • Cover and let cook.
