Tomato Jam
Ingredients
3 lbs ripe Italian plum tomatoes | ||
1 small onion, minced | ||
1/2 cup brown sugar | ||
1/4 cup white vinegar | ||
2 tsp kosher salt | ||
Juice of 1 lemon |
This jam is perfect over grilled meats or fish.
Directions:
- Peel and seed the tomatoes and add to a large sauce pan.
- Add the rest of the ingredients, then using very low heat simmer for at least 4 hours, stirring occasionally.
- Transfer to sterilized glass jars, or use a hot-water canning bath for 15 minutes for long term storage.
