Curried Moroccan Couscous

Ingredients

  • 2 and 1/2 cups vegetable broth
  • 1/2 cup golden raisins
  • 1/4 cup fresh lemon juice
  • 2 tbs candied ginger
  • 1 tsp curry powder
  • 1 cup couscous
  • 1/3 cup celery,finely diced
  • 1/4 cup scallions, thinly sliced
  • 2 tbs fresh cilantro,chopped
  • 1/3 cup pistachio nuts, roasted and coarsely chopped
This is a delicious vegetarian dish flavored with raisins, lemon juice, candied ginger, curry powder and cilantro.

Directions:
  • Bring the broth to a boil, then toss all ingredients into the broth and stir well.
  • Cover and immediately remove from heat.
  • Let sit covered for 10 minutes, then stir.
  • Serve warm or cold.
