Ingredients

  • 3 lbs large ripe tomatoes, cored and cut into 6 wedges
  • 4 large scallions, thinly sliced, white and green parts
  • 2 tbs fresh parsley, chopped
  • 1 cup extra virgin olive oil
  • 3/4 cup plain rice vinegar
  • 2 tbs dark brown sugar, packed
  • 1 celery stalk, thinly sliced
  • 1 tbs fresh oregano, chopped
  • 2 tsp fresh thyme, chopped
  • 1 tsp hot pepper sauce
  • 1 tsp lemon peel, grated
  • kosher salt and black pepper to taste
  • Combine tomatoes, green onions, and parsley in a large bowl.
  • Combine oil and all remaining ingredients in a heavy sauce pan.
  • Stir over medium-low heat until sugar and salt dissolve,about 1 minute.
  • Stir warm marmalade into tomato mixture, then chill for at least 4 hours.
