Spiced Grilled Lime Chicken with White Sauce
Ingredients
1 tbs thyme | ||
1 tbs oregano | ||
1 tbs ground cumin | ||
1 tbs paprika | ||
1 tsp garlic powder | ||
Kosher salt and fresh cracked black pepper | ||
Juice from 2 limes | ||
2 tbs canola oil | ||
1 3-4 lb fryer chicken, cut into pieces |
This recipe takes charcoal grilling to a new level. The white sauce is a wonderful bonus.
Directions:
- Place chicken in a non reactive bowl and add all of the ingredients and rub well into chicken.
- Add spiced chicken to a large zip lock plastic bag and refrigerate for at least 4 hours or overnight.
- Meanwhile prepare the white sauce.
- Once the chicken has marinated, grill over hot charcoal or on a gas or stove top grill. Cook about 15 minutes per side or until firm, turning several times during cooking.
- You may baste chicken with some of the white sauce toward the end of cooking.
White Sauce:
- 1 and 1/4 cups mayonnaise
- 1/4 cup white vinegar
- 1 tsp garlic powder
- kosher salt and fresh cracked black pepper to taste
- 1 tsp cayenne pepper
- 1 tbs whole grain spicy brown mustard
- 1 tsp 2 tsp wasabi powder (you may substitute prepared horseradish)
- Mix together all ingredients until thoroughly combined.
- 1 tsp sugar
- 2 tsp wasabi powder ( you can substitute prepared horseradish if desired.
- Mix together all ingredients until thoroughly combined.
