Greek Meatballs
Ingredients
1 and 1/2 lbs of ground lamb | ||
1 cup cooked rice | ||
2 tbs chopped onion | ||
2 tbs fresh parsley, chopped | ||
1 tbs pine nuts toasted | ||
2 cloves garlic, minced | ||
2 tsp oregano | ||
1 egg | ||
flour | ||
2 cups tomato sauce | ||
4 cups water | ||
2 tbs butter |
- Mix ground lamb and rice, oregano, onion, parsley, pine nuts, garlic and eggs.
- Mix and mold into small meatballs.
- Roll each in flour.
- In a large frying pan place the tomato sauce and water, then bring to a heavy simmer. Add the butter.
- Gently drop the meatballs into this sauce, cover and simmer for 45 minutes.
