Herb Garden Potato Salad
Ingredients
3 lbs potatoes | ||
1 cup chopped celery | ||
1/2 cup sliced scallions | ||
2 tbs fresh parsley, chopped | ||
1 cup cottage cheese | ||
3/4 cup milk | ||
3 tbs lemon juice | ||
2 tbs cider vinegar | ||
1/2 tsp celery seed | ||
1/2 tsp dill weed | ||
1/2 tsp dry mustard | ||
1/2 tsp white pepper | ||
kosher salt to taste |

- Scrub potatoes and boil in skins until fork tender.
- Cool, peel and cut into 1 inch cubes.
- Add to a large bowl along with celery, scallions and parsley.
- Meanwhile in a blender, blend cottage cheese, milk, lemon juice, vinegar, celery seed, dill weed, dry mustard and white pepper until smooth.
- Chill for 1 hour.
- Pour chilled dressing over potatoes and vegetables, season with salt
