Low Calorie Shrimp and Macaroni Salad
Ingredients
3/4 cup macaroni shells | ||
3/4 lb medium shrimp, shelled and deveined | ||
1 cup cauliflower, chopped | ||
1 cup celery, sliced | ||
1/2 cup bottled low calorie French dressing | ||
1/2 cup fresh parsley, chopped | ||
1/4 cup sweet pickle | ||
1/4 cup low calorie mayonnaise | ||
1 tbs lemon juice | ||
1 tbs grated onion | ||
1/2 tsp celery seeds | ||
1/4 tsp fresh cracked black pepper | ||
dash of kosher salt |
This dish is perfect for a weight loss and diabetic diet. Each serving contains only 83 calories.
Directions:
- Cook macaroni according to package directions. Add a dash of kosher salt.
- Drain macaroni and combine with all remaining ingredients and gently toss.
- Cover and refrigerate for 8 hours before serving.
