Low Calorie Shrimp and Macaroni Salad
- 3/4 cup macaroni shells
- 3/4 lb medium shrimp, shelled and deveined
- 1 cup cauliflower, chopped
- 1 cup celery, sliced
- 1/2 cup bottled low calorie French dressing
- 1/2 cup fresh parsley, chopped
- 1/4 cup sweet pickle
- 1/4 cup low calorie mayonnaise
- 1 tbs lemon juice
- 1 tbs grated onion
- 1/2 tsp celery seeds
- 1/4 tsp fresh cracked black pepper
- dash of kosher salt
This dish is perfect for a weight loss and diabetic diet. Each serving contains only 83 calories.
- Cook macaroni according to package directions. Add a dash of kosher salt.
- Drain macaroni and combine with all remaining ingredients and gently toss.
- Cover and refrigerate for 8 hours before serving.
