Flank Steak Fajitas


  • • 1 lb of flank steak
  • • 1/4 cup of extra virgin olive oil
  • • 1 tbs oregano
  • • 1 tbs ground cumin
  • • 2 cloves garlic, minced
  • • 1 small onion, minced
  • • 2 jalapenos or Serrano chilies, seeds removed and chopped
  • • Kosher salt and fresh cracked black pepper

  • • Shredded Pepper jack cheese
  • • Sour Cream
  • • Shredded lettuce
  • • Chopped tomatoes

Here is a wonderful version of fajitas.The key to this recipe is to marinate the meat overnight. Once the meat has marinated it is a quick and easy recipe to prepare.


  • In a non reactive bowl add the olive oil, oregano, cumin, garlic, onions, peppers, salt and pepper.
  • Cutting across the grain, slice the flank steak into 1/2 inch strips.
  • Add the steak to the marinade and mix to cover.
  • Refrigerate and cover the steak for 8 hours, or overnight, mixing occasionally..
  • In a saute pan using medium heat, with a little oil toast each tortilla, about 30 seconds per side.Reserve and keep warm.
  • Remove meat from the marinade.
  • In a saute pan using high heat stir fry the meat for about 3 minutes,stirring occasionally.
  • Divide the meat among the tortillas.
  • Garnish each tortilla with the ingredients of your choice.
