Lamb with Green Olives

Ingredients
3 lbs boneless lamb loin, trimmed of fat | ||
3 lbs boneless lamb loin, trimmed of fat | ||
1 cup of green olives with pimento | ||
2 cloves of garlic,minced | ||
kosher salt and fresh cracked black pepper to taste | ||
chicken stock or water for braising | ||
lemon wedges for garnish |
This dish uses lamb loin with all fat trimmed off which is then braised until tender.
- In a large saute pan over medium high heat,add the olive oil and brown the lamb on all sides.
- Season the lamb with salt and pepper.
- Add enough stock or water to cover the lamb halfway and lower the heat and partially cover.
- Simmer for 30 minutes.
- Add the olives and cook for another 5 minutes, until the olives are heated through.
- Remove lamb from pan and let rest for 15 minutes, then slice into 1 inch slices.
