Lamb with Green Olives

  • 3 lbs boneless lamb loin, trimmed of fat
  • 3 lbs boneless lamb loin, trimmed of fat
  • 1 cup of green olives with pimento
  • 2 cloves of garlic,minced
  • kosher salt and fresh cracked black pepper to taste
  • chicken stock or water for braising
  • lemon wedges for garnish

This dish uses lamb loin with all fat trimmed off which is then braised until tender.


  • In a large saute pan over medium high heat,add the olive oil and brown the lamb on all sides.
  • Season the lamb with salt and pepper.
  • Add enough stock or water to cover the lamb halfway and lower the heat and partially cover.
  • Simmer for 30 minutes.
  • Add the olives and cook for another 5 minutes, until the olives are heated through.
  • Remove lamb from pan and let rest for 15 minutes, then slice into 1 inch slices.
