Italian Cole Slaw
|1 small head of green cabbage, cored and shredded thinly|
|1/2 cup shredded red cabbage|
|1/2 cup of extra virgin olive oil|
|1/4 cup of red wine vinegar|
|2 tbs of sugar|
|kosher salt to taste|
This is a super simple easy coleslaw that is great served in sandwiches instead of lettuce. You can make it in about 15 minutes.
- Shred the cabbages and carrot.
- In a bowl mix the olive oil, red wine vinegar and sugar, and mix well.
