Italian Cole Slaw


  • 1 small head of green cabbage, cored and shredded thinly
  • 1 carrot
  • 1/2 cup shredded red cabbage
  • 1/2 cup of extra virgin olive oil
  • 1/4 cup of red wine vinegar
  • 2 tbs of sugar
  • kosher salt to taste
This is a super simple easy coleslaw that is great served in sandwiches instead of lettuce. You can make it in about 15 minutes.
  • Shred the cabbages and carrot.
  • In a bowl mix the olive oil, red wine vinegar and sugar, and mix well.
