Carrot Salad with Nuts and Raisins
- 1 lb of carrots, grated
- 1/2 cup raisins
- 1/2 cup chopped peanuts
- kosher salt and fresh cracked black pepper to taste
- 2 tsp lemon rind
- 2 tbs lemon juice
- 1 and 1/4 cup of sour cream
- Coarsely grate carrots.
- Mix carrots with raisins, and peanuts.
- Season with salt and pepper.
- In a bowl add the lemon rind, lemon juice and sour cream. Mix well.
- Pour the dressing over the carrot mixture and gently mix well.
