Carrot Salad with Nuts and Raisins


  • 1 lb of carrots, grated
  • 1/2 cup raisins
  • 1/2 cup chopped peanuts
  • kosher salt and fresh cracked black pepper to taste
  • 2 tsp lemon rind
  • 2 tbs lemon juice
  • 1 and 1/4 cup of sour cream
  • Coarsely grate carrots.
  • Mix carrots with raisins, and peanuts.
  • Season with salt and pepper.
  • In a bowl add the lemon rind, lemon juice and sour cream. Mix well.
  • Pour the dressing over the carrot mixture and gently mix well.
