Baby Potatoes with Sour Cream and Caviar
- 30 baby new potatoes
- 1 cup sour cream
- 2 tbs caviar
- Preheat oven to 400 degrees.
- Prick the potato all over with a fork, and place on a baking tray.
- Bake for 40 minutes, or until tender. Cool to room temperature.
- Cut a cross in the top of each potato, squeeze open and top with a small dollop of sour cream and a little caviar.
