Baby Potatoes with Sour Cream and Caviar


  • 30 baby new potatoes
  • 1 cup sour cream
  • 2 tbs caviar
  • Preheat oven to 400 degrees.
  • Prick the potato all over with a fork, and place on a baking tray.
  • Bake for 40 minutes, or until tender. Cool to room temperature.
  • Cut a cross in the top of each potato, squeeze open and top with a small dollop of sour cream and a little caviar.
