Martinique Sauce Piquant


  • 1/2 cup hot water
  • 1 cup shallots, minced
  • 1/4 cup fresh chives, chopped
  • 2 cloves garlic, minced
  • 4 hot green peppers, seeded and chopped
  • 3 tbs lime juice
  • kosher salt and freshly cracked black pepper


  • Pour the hot water over the shallots, chives, garlic and hot pepper, mix well.
  • Stir in the lime juice and season to taste with salt and pepper.
  • Allow to stand for 1 hour before serving.
