Jamaican Spice Rub


  • 3 tbs ground cloves
  • 5 bay leaves, ground
  • 2 tbs kosher salt
  • 2 tbs pink peppercorns, ground
  • 2 tbs allspice
  • 1 tsp cayenne pepper

This rub gives some authentic flavor to beef, pork or chicken.


  • Add cloves, allspice berries, pink peppercorns and bay leafs to a spice grinder and ground into a powder.
  • Add to a bowl, then add the salt and cayenne pepper.
  • Use as a rub on beef, chicken or pork.
