Maryland Chicken Boil
Ingredients
1/4 cup diced bacon, firmly packed | ||
1 cup rice, uncooked | ||
3 lbs chicken parts | ||
1 (17oz) can corn, drained | ||
1 (14oz) can stewed tomatoes | ||
2 medium onions, quartered | ||
2 tbs Old Bay seasoning | ||
2 tsp paprika | ||
2 and 1/2 cups chicken stock |
Directions:
- In a large sauce pan, fry bacon, then stir in rice to coat with bacon fat.
- Add in remaining ingredients, cover and bring to a boil, then reduce heat to a simmer.
- Simmer for at least 1 hour or until chicken is cooked through.
