Tomato Jam

Ingredients

3 lbs ripe Italian plum tomatoes
1 small onion, minced
1/2 cup brown sugar
1/4 cup white vinegar
2 tsp kosher salt
Juice of 1 lemon

This jam is perfect over grilled meats or fish.
Directions:

  • Peel and seed the tomatoes and add to a large sauce pan.
  • Add the rest of the ingredients, then using very low heat simmer for at least 4 hours, stirring¬†occasionally.
  • Transfer to sterilized glass jars, or use a hot-water canning bath for 15 minutes for long term storage.
