Caribbean Green Mango Relish


  • 2 green unripe green mangoes, 1 lb each
  • 2 tsp grated onion
  • 1 tsp fresh hot red pepper, seeded and chopped
  • 1 tbs peanut oil
  • kosher salt and black pepper to taste
  • chopped parsley for garnish


  • Peel the mangoes and chop coarsely and press the flesh through a wire mesh sieve into a bowl.
  • Add the grated onion, hot pepper, salt and pepper.
  • It goes particularly well with curry, fish or meat.
