Caribbean Green Mango Relish
|2 green unripe green mangoes, 1 lb each|
|2 tsp grated onion|
|1 tsp fresh hot red pepper, seeded and chopped|
|1 tbs peanut oil|
|kosher salt and black pepper to taste|
|chopped parsley for garnish|
- Peel the mangoes and chop coarsely and press the flesh through a wire mesh sieve into a bowl.
- Add the grated onion, hot pepper, salt and pepper.
- It goes particularly well with curry, fish or meat.
