Caribbean Green Mango Relish
- 2 green unripe green mangoes, 1 lb each
- 2 tsp grated onion
- 1 tsp fresh hot red pepper, seeded and chopped
- 1 tbs peanut oil
- kosher salt and black pepper to taste
- chopped parsley for garnish
- Peel the mangoes and chop coarsely and press the flesh through a wire mesh sieve into a bowl.
- Add the grated onion, hot pepper, salt and pepper.
- It goes particularly well with curry, fish or meat.
