Herb Basting Butter

This is a wonderful compound butter that is wonderful when basted over chicken, beef, pork or seafood.


  • 1/4 lb unsalted butter
  • 1 tsp lemon juice
  • 1 tbs finely minced chopped fresh herbs of choice.(basil, tarragon, thyme and or chives.)
  • Cream butter until fluffy.
  • Blend 1 tsp lemon juice and the herbs.
  • Let stand for 1 hour before using.
  • Baste over meats of seafood with a pastry brush.
  • Recipe may be multiplied if desired.
