- 1 large cucumber, halved lengthwise, seeds removed
- 1 tbs lemon juice
- 2 tbs fresh cilantro, chopped
- kosher salt to taste
- Halve cucumber and remove seeds with a spoon.
- Finely dice the cucumber.
- Add the cucumber and lemon juice to a non reactive bowl and add the cilantro and season with kosher salt.
- Mix well cover and refrigerate for several hours before serving.
- Use as a relish with chicken or seafood.
