Cucumber and Cilantro Relish


  • 1 large cucumber, halved lengthwise, seeds removed
  • 1 tbs lemon juice
  • 2 tbs fresh cilantro, chopped
  • kosher salt to taste


  • Halve cucumber and remove seeds with a spoon.
  • Finely dice the cucumber.
  • Add the cucumber and lemon juice to a non reactive bowl and add the cilantro and season with kosher salt.
  • Mix well cover and refrigerate for several hours before serving.
  • Use as a relish with chicken or seafood.
