Crab Louis Salad
|1 lb jumbo lump crab meat|
|1/2 cup chili sauce|
|1/4 cup mayonnaise|
|1/4 cup scallions, thinly sliced|
|3 tsp lemon juice|
|5 cups mixed salad greens|
|2 roma tomatoes, sliced|
|4 hard cooked eggs, quartered|
|1 (6 oz) can pitted ripe olives, optional|
- Stir together crab meat, chili sauce, mayonnaise, onion and lemon juice. Chill for at least 30 minutes.
- Place salad greens on 6 individual salad plates.
- Arrange tomatoes, eggs and olives artfully over the salad greens and top with the crab meat mixture.
