Chilled Cucumber Soup

  • 2 cucumbers, peeled, seeded, chopped
  • 1/2 ripe avocado, chopped
  • juice of 1 lime
  • 1 tbs avocado oil
  • kosher salt to taste
  • Puree cucumbers, avocado and lime juice in a food processor or blender.
  • Strain the mixture into a bowl.
  • Stir in 1 cup of water or vegetable stock, and season with salt.
  • Place mixture in the refrigerator and chill for several hours before serving.
  • When serving, drizzle a few drops of avocado oil on each serving.
