Mango Salad

Ingredients

2 large mangos, peeled and cut into small chunks
3 spring onions, sliced on a bias, white and green parts
1/4 cucumber, peeled and cut into dice
1/4 cup basil leaves, torn
1/4 cup mint leaves, torn
1/4 cup fresh lime juice
3 tsp kosher salt
2 red hot peppers, diced, optional

This is a fresh and fruity salad highlighted with the flavors of mint, spring onions, lime and mint.

  • Add all ingredients to a large glass bowl combine and mix well.
  • Let stand for 10-15 minutes before serving.
