Waldorf Chicken Salad

  • 2 cups shredded rotisserie chicken
  • 1 cup grapes
  • 1 cup walnut pieces
  • 1 cup plain Greek yogurt
  • 1 tbs mustard
  • 1 tbs red wine vinegar
  • 1 tbs honey
  • 1 (12 oz) package mixed greens
  • kosher salt and black pepper to taste
  • Break the shredded chicken into smaller pieces and halve the grapes. Place in a large bowl along with walnuts and celery.
  • Whisk yogurt together with mustard, vinegar, and honey until smooth.
  • Toss the chicken mixture with the dressing until fully combined.
  • Serve over mixed greens or on a sandwich.
