Waldorf Chicken Salad
|2 cups shredded rotisserie chicken|
|1 cup grapes|
|1 cup walnut pieces|
|1 cup plain Greek yogurt|
|1 tbs mustard|
|1 tbs red wine vinegar|
|1 tbs honey|
|1 (12 oz) package mixed greens|
|kosher salt and black pepper to taste|
- Break the shredded chicken into smaller pieces and halve the grapes. Place in a large bowl along with walnuts and celery.
- Whisk yogurt together with mustard, vinegar, and honey until smooth.
- Toss the chicken mixture with the dressing until fully combined.
- Serve over mixed greens or on a sandwich.
