Waldorf Chicken Salad

Ingredients
2 cups shredded rotisserie chicken | ||
1 cup grapes | ||
1 cup walnut pieces | ||
1 cup plain Greek yogurt | ||
1 tbs mustard | ||
1 tbs red wine vinegar | ||
1 tbs honey | ||
1 (12 oz) package mixed greens | ||
kosher salt and black pepper to taste |
- Break the shredded chicken into smaller pieces and halve the grapes. Place in a large bowl along with walnuts and celery.
- Whisk yogurt together with mustard, vinegar, and honey until smooth.
- Toss the chicken mixture with the dressing until fully combined.
- Serve over mixed greens or on a sandwich.
